Omelettes are perfect when you want something speedy and simple. This one has peppery watercress and oozy melted smoked cheddar which is a really delicious combo.
Ingredients:
2 – 3 eggs
Godminster smoked cheddar – grated
2 handfuls of watercress – one roughly chopped.
salt and black pepper
½ tbsp vegetable oil
What to do:
Crack the eggs into a bowl, season to taste with salt and pepper and lightly beat.
Heat the oil in a non stick frying pan, then pour in the beaten eggs. Use a spatula to move the eggs around the pan for the first 20 seconds.
Top with a generous sprinkling of the cheddar and the chopped watercress.
Continue to cook the omelette until the base is golden brown and the cheese has melted.
Fold the two sides over and slide on to a plate. Serve with the second handful of watercress on the side.
