Gluten Free Easter Rocky Road

It’s Easter this weekend and I can’t wait for a long bank holiday weekend, teamed with chocolate treats. I haven’t had a break since Christmas so I’m really, really ready for a bit of a break. We have our first BBQ of the year planned so have our fingers well and truly crossed for good weather.

These Mini Egg rocky road bars are an intensely chocolatey treat, everything you could wish for when it comes to Easter snacking!  They are really simple to make, the lack of baking makes them a great recipe to make with kids. Made with dark chocolate, mini marshmallows, gluten free digestive biscuits and covered in mini eggs, these rocky road bars are the perfect sweet treat for the whole family to enjoy. I’ve made these with mini eggs and pistachios but you can swap these ingredients for any delicious ingredients you have lying around (raisins, salted caramel pieces, fresh berries, M&M’s would all be great) making then great for using up any spare Easter sweets.

Gluten Free Easter Rocky Road   


Prep time: 15 minutes
Cooking time: 5 minutes
Serves: 10

Ingredients:

  • 200g dark chocolate
  • 2 tbsp golden syrup
  • 120g butter
  • 100g mini marshmallows
  • 200g gluten free digestive biscuits
  • 100g pistachios
  • 100g mini eggs
  • 50g white chocolate (optional)
  • White chocolate stars (optional)

Method

Line a medium square baking tray with baking paper and set aside.

Put the biscuits into a freezer bag and bash until they’re all broken into small pieces, then put this to one side.

Place the butter, chocolate and golden syrup into a pan and warm over a gentle heat stirring it constantly until the chocolate melts, then remove from the heat.

Take the biscuits, marshmallows and pistachios and ass to the pan of melted chocolate. Stir together until everything is completely covered.

Tip the mixture into the lined baking tray and apt it down a little, making sure you spread the mixture out to the corners. Cover the mixture with the mini eggs and white chocolate stars.

Refrigerate the mixture for at least 2 hours. When the mixture is cold and set cut into 8-10 pieces.

Melt the white chocolate in a bowl over a saucepan of warm water, then drizzle over the squares of rocky road.

Enjoy with a nice cup of tea!
