It’s the start of May and with the evenings brightening up I’m starting to think about summertime. Trips to the beach, weekends away camping and summer BBQ’s, I can’t wait! Now if there’s one dessert that really makes me think of summer it’s Eton mess. I love it! Fruity, sweet and incredibly easy to prepare, not many other desserts can be ready in just 10 minutes. I’ve added pimms to this recipe for a boozy kick and even more summery flavours.
Eaton mess
Prep time: 10 minutes
Serves: 2
Ingredients:
1 punnet of strawberries
2 tbsp Pimms
2 small meringue nests
150ml double cream
3 whole strawberries cut in half
Take the punnet of strawberries and wash it in a colander under the tap. Hull them, cut them into small bite size pieces and place them into a bowl. Pour over the pimms and crush the strawberries lightly with a fork.
Crush the meringues into bite sized pieces and place in a separate bowl.
Whip the cream until it holds its shape. Scoop the strawberries out of the bowl and into the cream leaving behind the pimms liquid. Gently fold the strawberries into the cream, then stir in the crushed meringues.
Spoon this mix into two bowls or glasses then pour over the pimms liquid.
Top with the strawberry halves and serve right away.
