This fresh fruit salad is the ultimate healthy summer dish. It’s perfect for dessert, snacking or add some yoghurt and a sprinkle of granola and have it for breakfast. The different flavours, colours and textures come together to make this salad a real treat. Make sure that you choose fruit that is ripe but not overripe and mushy and your salad will look fresh and vibrant.
Super Berry Fresh Fruit Salad

Serves: 4
Ingredients:
½ punnet of strawberries
1 kiwi
1 orange
½ small fresh pineapple
½ punnet raspberries
½ punnet blackberries
1 small punnet blueberries
Hull the strawberries and chop them into halves and quarters (depending how big they are) and place in a large bowl.
Cut the skin off the kiwi, cut it in halves, then cut each half into slices.
Cut off the top and the bottom of the orange and cut away the remaining peel and white pith, cut along either side of each segment to release it. Squeeze any remaining juice from the remaining orange into the bowl and discard the pith and skin.
To prepare the pineapple remove the leafy crown with a sharp knife and cut a thin slice from the base. Slice the skin away from the sides removing any brown ‘eyes’ as you go. Cut the pineapple in half lengthways and then into quarters. Remove the tough central core and discard. Chop into bite sized pieces.
Add all the chopped fruit to the bowl then add the raspberries, blackberries and blueberries. Give the salad a careful stir and serve.
This salad will keep in the fridge overnight but is best eaten the same day.
