I’m not really a morning person so i’ll take anything that will make my mornings easier and less rushed. I love a long lazy weekend breakfast but on weekdays 10 minutes more sleep tends to seem more important. Breakfast bars are a great solution, just grab one on your way out the door and have it with a cuppa when you get to work. These breakfast bars are sweetened by fruit and contain no refined sugar. Bake them on a Sunday night and you have breakfast ready to go for the next week or a tasty afternoon snack to get you past the 3 o’clock slump.
Gluten Free Fruit and Nut Breakfast Bars
Prep time: 15 minutes
Cooking time: 20-25 minutes
- 150g butter
- 60g stoned dates, finely chopped
- 60g sultanas
- 50g mixed nuts and seeds
- 200g gluten free oats
- 2 large apples (I used braeburns)
- 1tsp cinnamon
Preheat the oven to 180C and line a 20cm/8in square baking tin with baking paper.
Melt the butter in a large pan over a low heat.
When the butter is completely melted add the dates, sultanas, nuts and seeds, oats and give the mixture a good stir.
Peel, core and grate the apples and add them to the mixture. Sprinkle over the cinnamon and stir until everything is combined.
Pack the mixture into the baking tin and squash down. Bake in the oven for 20-25 minutes, until the edges are golden brown.
Once cooked, take out of the oven and place on a cooling rack in the tin until completely cool, then turn out onto a chopping board and cut into 12 squares.
Wrap up each square individually for a great grab-and-go breakfast.
