This is a super healthy summer salad great for a workday lunch. It’s really quick to make and I’ve used ready cooked salmon to make it even easier.
Salmon and avocado salad
Prep time: 15 minutes
1 bag watercress, spinach and rocket mix
1 avocado, peeled and stone removed
6 radishes, thinly sliced
2 spring onions, thinly sliced
2 steamed salmon fillets
2 tbsp pine nuts, toasted
2 tbsp balsamic dressing
Salt and freshly ground black pepper
Divide the salad leaves between two plates, slice the avocado and lay on top of the leaves. Top with the radishes and spring onions, flake over the cooked salmon and sprinkle over the toasted pine nuts. Drizzle over the dressing and season with salt and pepper. Serve immediately.
