Tomato and Goat’s Cheese Salad

I love a good tomato salad, ripe juicy tomatoes full of flavour make me think of summer. This is great if you’re looking for a healthy summer salad and even better if you’re serving it alfresco, It goes really well with almost anything off the BBQ. For this recipe I used an Isle of Wight tomato selection pack I bought on Ocado, They taste fresh and juicy and I really like how all the different colours and shapes look on the plate.

Tomato and Goat’s Cheese Salad

Prep time: 10 minutes

Serves: 1 or 2 as a side dish

Ingredients:

1 pack mixed tomatoes

1 shallot, peeled and finely sliced

1 green chilli

50g goats cheese

4 sprigs flat leaf parsley, finely chopped

2 tsp olive oil

Salt and freshly ground black pepper

Chop the tomatoes and put in a serving dish. I like to chop them to different sizes, the larger ones into slices and the cherry ones into halves and quarters.

Sprinkle over the chopped shallot and green chilli. Crumble the goat’s cheese over the top then add the parsley. Drizzle over the olive oil and season well with the salt and pepper.
