Apparently there’s a whole bunch of rugby based sport on at the weekend, big guys throwing a funny shaped ball around and running towards a big H. As you can probably tell that i’m not really one for sport, but I’m definitely all for snacks and friends, and this guacamole is a great match day treat. Perfect for sharing with friends over a few ciders and gluten free beers.
Get a nice ripe avocado and guacamole is super easy and quick to make. Once you’ve had a freshly made batch you’ll never want to go back to the fake tasting shop bought ones again. I’ve served it with crunchy corn chips and hot spicy salsa but it’s also delicious in fajitas and quesadillas or just spread on toast. If you’re trying to lose a bit of weight or just be a little healthier serve it with crunchy carrot and celery sticks for a totally carb free snack.
Guacamole
Prep time: 15 minutes
makes: 1 bowl of dip
Ingredients:
1 large ripe avocado
1 red chilli, de seeded and finely chopped
3 spring onions, finely chopped
½ bunch fresh coriander, chopped
Juice of 1 large lime
Salt and freshly ground black pepper
To serve
Gluten free corn chips
Spicy tomato salsa
Cut the avocado in half and remove the stone. Scoop the flesh out into a bowl and mash roughly with a fork. I like it a bit chunky but if you like your guacamole smooth just mash it until you’re happy with the consistency.
Add the chopped chilli, spring onions and coriander then stir it through the avocado.
Squeeze the lime juice over the mix, season with the salt and pepper and give it a good stir through. Taste the guacamole and if you think it needs it season it a bit more.
Pop the bowl on a board with a pot of salsa and surround it with corn chips (make sure they are gluten free!). Enjoy with a couple of crisp bottles of cider.
