Have you ever gone to the kitchen craving a spicy snack only to find the snack cupboard empty? Well that’s exactly what happened to me on Saturday. Still in my PJ’s, with the rain pouring down and the wind howling outside I wasn’t to excited about the idea of leaving the house, so these spicy chickpeas were were the answer. They are easy to make and use only store cupboard ingredients. Not only that chickpeas are full of fibre, protein, vitamins and minerals so this is a guilt free spicy snack.
Spicy Oven Roasted Chickpeas
Prep time: 5 minutes
Cooking time: 30 – 40 minutes
makes: 1 bowl
Ingredients:
1x 400g can chickpeas
1 tbsp olive oil
1 tsp cumin
1 tsp chilli flakes
½ tsp cayenne pepper
½ tsp sea salt
Heat your oven to 200°F and spread some foil out over a tray.
Open the can of chickpeas, drain them and pour into a sieve. Wash the chickpeas thoroughly under the cold tap. Using some paper towels pat the chickpeas gently until they are dry, then pour them into a bowl.
Add the oil, cumin, chilli flakes, cayenne pepper and sea salt and stir well. Spread evenly out over the tray in one layer and place in the oven.
Bake until they are golden brown and crispy, remove from the oven, allow to cool a little and place in a bowl.
They are delicious served slightly warm or sprinkled over salads.
