Gluten Free Apple and Cinnamon Cake

So it’s Sunday and I’m sorting through the fruit bowl and I come across two apples that are looking a bit past their prime. I’m a bit fussy when it comes to apples, I like them crisp and not floury, but I hate waste so to save them from the bin I decided to turn them into a cake. (almost everything is better in cake form don’t you agree?) This moist apple-y cake is a perfect Sunday afternoon treat served up with a nice big cuppa.

 

Gluten Free Apple and Cinnamon Cake

Prep time: 10 minutes

Cooking time: 40 minutes

makes: 1 cake

Ingredients:

115g butter, softened

115g caster sugar

2 large eggs, beaten

130g gluten free self raising flour (I used Doves Farm)

1 tsp ground cinnamon

2 English eating apples, peeled and grated

1tsp caster sugar & ½ tsp ground cinnamon mixed together.

Heat the oven to 180°C. Grease and line a small loaf tin with greaseproof baking paper.

Put the softened butter and caster sugar in a mixing bowl and cream together until light and fluffy.

Gradually pour in the eggs beating the mix well after each addition.

Sift in the gluten free flour and the ground cinnamon and mix well.

Finally mix in the grated apple and pour the mix into the prepared loaf tin.

Bake in the pre-heated oven for 40 minutes until the top of the cake is golden brown and a skewer inserted into the cake comes out clean.

When cooked remove the cake from the oven and sprinkle the cinnamon sugar over the top.

Slice and serve with a nice hot cuppa tea.
