Gluten Free Granola

I’m a big fan of granola served up with some ice cold milk in the morning it’s a healthy and energy boosting way to start the day. You might think that making your own cereal is a bit strange but let me tell you with your own choice of crunchy nuts and sweet dried fruit it’s definitely worth it. You can also add seeds or coconut, if you like it sweet and a little less healthy you can even add some chocolate chips when the granola is cool.

Gluten Free Granola

Prep time: 10 minutes

Cooking time: 15 minutes

makes: 2 trays

Ingredients:

2 tbsp sunflower oil

150ml honey

150g mixed nuts

150g dried raisins and cranberries (You can use any sort of dried fruit you like)

400g gluten free oats

1 large pinch of salt

Preheat your oven to 180°F and spread baking paper over two large trays.

Place the sunflower oil and the honey in a large pan and warm over a medium heat. Stir continuously and when it starts to bubble turn off the heat add in the mixed nuts, gluten free oats and salt.

Stir the mix well so the honey and oil coats the oats and nuts thoroughly.  Divide the mix between the two trays and spread out evenly.

Place both trays in the oven for 10 minutes. After 10 minutes remove the trays, divide the dried fruits in two and stir them into both trays. Spread the mix out evenly and place back in the oven for 5 minutes.

Check the granola at this point, if its still a little soggy give it 5 more minutes in the oven. When its crisp and cooked remove both trays from the oven and allow to cool.

Place the granola in an airtight jar and it’s ready to serve up for breakfast.
